Combine prawns, lime juice, oregano & garlic in a flat glass dish. Sprinkle with salt & chill for 20 minutes, stirring occasionally
Halve avocados & scoop out flesh leaving a 1cm layer to act as a bowl. Coat with lime juice to stop avocado browning & keep the flesh for the ceviche
Strain half of the lime juice from prawns. Stir in jalapeños, coconut, corn, coriander & avocado
Sprinkle with salt & chill for at least 20 minutes to an hour
Divide ceviche into avocado shells. Serve with corn chips. Enjoy!
